Ingredients
1 tbsp cumin seeds
2 tsp ground coriander
1 tsp turmeric powder
1 medium onion, chopped
Aromatics
2 green chilies (such as jalapeno or serrano), seeds and pith removed
6 cloves garlic, chopped
2-inch piece ginger, minced
1 tsp salt
4 roma tomatoes, chopped
3 large globe eggplants (quantity depends on size)
1 tsp cayenne pepper (+ possibly more to taste at end)
1 tsp salt

Prep Procedure
Set the eggplants on an aluminum foil-lined baking sheet. Leave some separation between the 2.
Stab them seval times
Put on oven rack as close to burner without touching it
Broil for 1 hour, turning every 15 minutes
Procedure
oil just to cover pot bottom, cumin seeds until slightly darkened, M heat
+ coriander, turmeric, toast for 10 s.
+ onion
+ aromatics & salt, saute 3-4 min. until onions translucent
+ tomatoes, until tomatoes soft and mushy
+ eggplant, salt & cayenne p, mix and break up eggplant chunks
+ peas, splash of water to loosen and to allow to simmer without drying out
cover, cookover low heat for 15m, stirring occasionally (peas should yellow a bit from turmeric)
+ garam masala; and salt or cayenne pepper as needed. Mix in.
