Ingredients
6 chicken thighs, deskinned
1/2 bulb of garlic (~ 8 cloves), sliced thinly
1 28 oz. can of whole tomatoes, sliced up
small celery bundle, cut off bottom and leaves, cut into 2” chunks
1# carrots, unpeeled, cut into 1” slices
1# parsnips, unpeeled, cut into 1” slices
1 large (or 2 small) onion cut into 1” chunks
3 tbsp olive oil
fresh ground pepper
Procedure
preheat oven to 350 F
lay out thighs in a casserole dish
tomatoes on top
garlic on top
olive oil on top
grind pepper over top until lots of black
celery on top
onions on top
carrots on top
parsnips on top
Bake covered: 2.5 hours
